What does hemp flour change in dumpling dough?

It changes two things at once: structure and taste. Traditional dumpling dough holds together thanks to the gluten network of wheat flour. Hemp flour has no gluten, so dough with a high proportion of it is crumbly and cracks when rolled. The solution is not to add a thickener, but to adjust the proportions.

In this recipe, hemp flour makes up about one third of the mixture, with the rest being buckwheat and rice or wheat flour. A tablespoon of oil added to the dough makes rolling easier, as fat reduces friction between the flour particles. Hemp flour is not a single product, and this is evident in the numbers. The flours from Rusu’s work, made from whole seeds, contained about 28-29 g of fat per 100 g. The Fedora variety flour described by Siano et al. (Molecules, 2018) had 13.6 g of fat and 30.7 g of protein. The more defatted the seeds, the more protein per gram of flour. When buying hemp flour, it is worth looking at the nutritional value table on the packaging instead of assuming a single value.

Separately, it is worth knowing the limits of this raw material. Mattila et al. (Plant Foods for Human Nutrition, 2018) measured 25.6 g of protein and 33.8 g of dietary fiber per 100 g of dry matter in oilseed hemp seeds, but the protein utilization rate was among the lowest of the seven studied plants. Hemp is a good dietary supplement, but not the most efficient source of protein.

How to make hemp dumplings step by step?

The proportions are enough for about 30 dumplings, or 4-5 servings. Preparation takes 30 minutes, resting the dough 20 minutes, and cooking another 30 minutes. The technique is the same as for wheat dumplings, with three adjustments: the dough is rolled thicker, the edges are sealed twice, and cooking takes about a minute longer.

Ingredients for hemp dough:

  • 150 g hemp flour
  • 200 g buckwheat flour
  • 100 g rice or wheat flour
  • 180-200 ml warm water
  • 1 tablespoon vegetable oil
  • half a teaspoon of salt

Ingredients for mushroom filling:

  • 30 g dried forest mushrooms, such as porcini or chanterelles
  • 1 large onion
  • 2 tablespoons butter or oil
  • optional 200 g cooked and drained sauerkraut
  • salt, pepper, dried marjoram
  1. Soak dried mushrooms in boiling water for 30 minutes. Drain, keep the broth, and finely chop the mushrooms.
  2. Sauté chopped onion in butter for 7 minutes until golden. Add mushrooms and fry for 5 minutes. If using cabbage, add it now. Season with marjoram, salt, and pepper, then set aside to cool.
  3. Mix three types of flour with salt in a bowl. Gradually pour in warm water and oil, kneading by hand. Knead for 5-7 minutes. The hemp dough is tougher than wheat dough but should be moldable.
  4. Cover the dough with a damp cloth and let it rest for 20 minutes. Warm dough is more pliable, so shape the dumplings right after resting, before it cools completely.
  5. Divide the dough into three parts. Roll each out on a generously floured surface to a thickness of about 2 mm and cut out circles with a diameter of 8 cm.
  6. Place a flat teaspoon of filling in the center of the circle, fold in half and pinch the edges, going along them twice. Gluten-free dough requires a stronger pinch than wheat dough, as poorly sealed edges open in the pot.
  7. Cook in batches of 10-12 in salted boiling water for 4-5 minutes from the moment they float. Remove with a slotted spoon.
  8. Optionally fry the dumplings in butter for 2 minutes on each side. Serve with sautéed onions and sour cream.

Does hemp flour contain THC?

Hemp flour is made from seeds, and seeds do not produce cannabinoids. Trace amounts come from contamination of the husk with dust from flowers during harvesting, which is why the law sets an upper limit instead of zero.

In the European Union, ground hemp seeds and other products processed from seeds have a maximum allowable THC level of 3.0 mg/kg, while hemp seed oil has 7.5 mg/kg. The limit is set by Commission Regulation (EU) 2023/915 on the maximum allowable levels of certain contaminants in food, effective from May 25, 2023. The level is calculated as the sum of delta-9-THC and its acid form THCA, converted to delta-9-THC. The food producer is responsible for adhering to this limit, and batches of raw material are subject to control testing.

The practical conclusion for the kitchen is simple: hemp flour sold as food does not have intoxicating effects and is not a narcotic product. What filling goes well with hemp dough?

The earthy flavor of the dough pairs better with bold fillings than delicate ones. Forest mushrooms are the safest choice, but not the only sensible one. The rule is simple: the filling must have its own strong accent, as a mild filling simply disappears in the face of the hemp note.

Russian filling, which is boiled potatoes with white cheese and sautéed onion, works on the principle of contrast: the milky sweetness of the cheese balances the nutty note of the flour. Sauerkraut with mushrooms goes the other way and enhances acidity, which can be needed with heavy dough. The tested proportion in this version is 300 g of cabbage to 15 g of dried mushrooms, and a pinch of caraway added at the end of frying brings everything together.

A sweet filling of cottage cheese with vanilla also holds up, though it requires courage.
