  • 1 large onion
  • 3 cloves of garlic
  • 1 teaspoon of grated fresh ginger or 1/2 teaspoon of ground ginger
  • 1 tablespoon of curry paste (red or yellow) or 2 teaspoons of curry spice
  • 1 teaspoon of turmeric
  • 1 teaspoon of ground cumin
  • a pinch of cayenne or chili (to taste)
  • 2 tablespoons of coconut oil or olive oil
  • salt, freshly ground black pepper
  • fresh cilantro or parsley for serving

How to prepare curry with hemp flour – step by step?

The technique of adding hemp flour is key – pre-mixed in cold water, it combines smoothly with the sauce without lumps. The rest of the recipe follows the classic curry technique.

Step 1. Sauté the aromatic base. In a deep skillet or pot, heat coconut oil over medium heat. Add finely chopped onion and sauté for 5–6 minutes until soft. Add garlic and ginger, sauté for 1 minute. Stir in the curry paste or curry spice and cumin – sauté for 30 seconds, stirring constantly until the aroma is released.

Step 2. Add tomatoes and coconut milk. Pour in the diced tomatoes and coconut milk. Add turmeric, cayenne, and a pinch of salt. Mix thoroughly. Bring to a boil over medium heat, reduce the flame, and cook for 10 minutes uncovered – the sauce will thicken and the flavors will meld.

Step 3. Prepare the hemp flour suspension. In a small bowl, combine 2 tablespoons of hemp flour with 4 tablespoons of cold water. Mix with a fork for 30 seconds until a smooth, uniform suspension without lumps is achieved. Cold water is essential here – hot water creates instant starch lumps.

Step 4. Thicken the sauce. Pour the hemp flour suspension into the boiling curry in a thin stream, constantly stirring with a whisk. Cook for 3–4 minutes on low heat – the hemp flour will lose its raw taste and the sauce will thicken to a creamy consistency. If the sauce is too thick, add 50–100 ml of water.

Step 5. Add the chickpeas and season. Drain the chickpeas and rinse them under cold water. Add to the sauce and cook together for 5 minutes. Taste: if necessary, add salt, lime juice, or a pinch of garam masala. The chickpeas should be warm and infused with the curry aroma, not overcooked.

Tips and variations

Curry with hemp flour is versatile. Here are a few tried-and-true modifications:

Add vegetables. Spinach (200 g fresh, add in the last 2 minutes), sweet potatoes (diced, cook from the beginning with the sauce), or cauliflower (florets, add with the chickpeas) perfectly complement this curry. Each absorbs the sauce's aroma differently.
