Ingredients – what do you need?

  • 3 very ripe bananas (about 300 g peeled)
  • 2 medium-sized eggs
  • 80 ml of rapeseed oil or melted butter
  • 3 tablespoons of honey or maple syrup
  • 1 teaspoon of vanilla extract
  • 200 g of all-purpose flour
  • 1 teaspoon of baking powder, 0.5 teaspoon of baking soda
  • 5 tablespoons of hulled hemp seeds (4 for the batter + 1 on top)
  • 1 teaspoon of cinnamon, a pinch of salt

How to prepare banana bread with hemp seeds – step by step?

Preheat the oven to 175°C. Loaf pan 23×13 cm. Active time: about 15 minutes. Baking: 50–55 minutes.

Step 1. Mash the bananas. Peel 3 very ripe bananas and mash them with a fork into a puree. The darker the skin, the sweeter and more intense the aroma. A few lumps are acceptable – over-mixing introduces unnecessary air.

Step 2. Add the wet ingredients. Into the banana puree, crack 2 eggs, add oil, honey, and vanilla. Mix until combined. Ingredients must be at room temperature – cold eggs or butter can curdle the mixture.

Step 3. Fold in the dry ingredients. In a separate bowl, combine flour, baking powder, baking soda, salt, and cinnamon. Pour into the banana mixture and stir only until combined – visible lumps are better than overworked batter with activated gluten.

Step 4. Hemp seeds and baking. Fold in 4 tablespoons of hemp seeds. Pour into the pan, sprinkle the top with 1 tablespoon of seeds. Optionally, press half a banana on top. Bake for 50–55 minutes. Check with a toothpick – if it comes out dry, it's ready. Cool for 15 minutes in the pan, then on a rack. Cut after completely cooling.

Tips and variations

An important technical observation: hemp seeds mixed into the batter before baking retain more crunchiness than those sprinkled on top. This is because they are not exposed to direct contact with steam during baking in the moist interior of the cake. Seeds on top caramelize slightly and provide a crunchy crust – both effects are good but have different characteristics. Best result: 4 tablespoons in the batter + 1 tablespoon on top.

Nut version. Add 60 g of chopped walnuts or pecans along with the hemp seeds. Nuts and hemp seeds have a similar fat profile (unsaturated fatty acids), so they taste cohesive. The cake becomes more filling – good when a portion is meant to replace a second breakfast.

Chocolate version. Add 2 tablespoons of raw cocoa to the dry ingredients and 80 g of chopped dark chocolate to the batter. Chocolate, banana, and hemp seeds create a flavor profile similar to popular chocolate-banana bars, but without stabilizers and refined sugar. Then reduce the honey to 2 tablespoons.

Vegan version. Replace 2 eggs with 2 tablespoons of flaxseed soaked in 6 tablespoons of water for 10 minutes (the so-called flax egg – the flax absorbs water and forms a gel with a consistency similar to egg white). The cake will be slightly denser, but fully vegan. Instead of honey, use agave syrup. Hemp seeds and hemp flour are naturally vegan.
