Hemp Pollen – what is it and how to use it in the kitchen
What is hemp pollen (kif), how to use it in dishes, desserts, and beverages. Dosing, safety, and recipes.
Hemp pollen looks like golden powder and has an intense, resinous aroma — it is a concentrated extract of trichomes from hemp flowers, also known as kif. It is one of the most aromatic and concentrated hemp products, used both as a culinary ingredient and a form of CBD supplementation. In the kitchen, it is used in very small amounts — a pinch is enough to add a complex, resinous note to a dish while enriching it with cannabinoids. In this article, I will explain what pollen is from a chemical perspective, how to use it safely in the kitchen, and what to pay attention to when purchasing.
KEY INFORMATION
• Hemp pollen (kif) consists of trichomes from hemp flowers — concentrated cannabinoids (CBD, terpenes) without protein and fiber.
• Pyłek z konopi CBD (<0,3% THC) jest legalny w Polsce od maja 2022 roku.
• Culinary dosage: 0.1–0.3 g per serving; use with fat for better absorption of CBD (Saals et al., Scientific Reports, 2025).
• Do not heat above 160°C — cannabinoids and terpenes degrade at higher temperatures (Jaidee et al., PMC 2022).
What is hemp pollen and how is it produced?
Pyłek konopny, popularnie zwany kif (z arabskiego „kef” — przyjemność), to drobnoziarnisty proszek składający się w przeważającej mierze z trichomów gruczołowych — mikroskopijnych gruczołów żywicznych pokrywających kwiaty i liście konopi. Trichomy to fabryki kannabinoidów i terpenów rośliny: tam produkowany jest CBD, THC, CBG, CBN i dziesiątki terpenów (mircen, limonen, linalool, pinena).
How is pollen obtained? Most often through the mechanical separation of trichomes from the dried plant — the dried material is sifted through fine screens (usually 75–100 microns), which retain the plant material while allowing the trichome powder to pass through. The result is a resinous, golden or light green powder with an intense aroma. The better the quality of the starting material, the better the pollen.
The concentration of CBD in hemp pollen is significantly higher than in the dried plant itself. If the CBD dried flower has 10–15% CBD, the pollen can have 30–50% CBD (or more), as trichomes are the sites of cannabinoid accumulation. This makes pollen a concentrated form — small amounts can provide a potentially strong supplemental effect.
Is hemp pollen legal in Poland?
Hemp pollen from industrial hemp (Cannabis sativa L.) with THC content below 0.3% has been legal in Poland since May 7, 2022, when the amendment to the drug prevention law raised the THC threshold from 0.2% to 0.3%. This applies to CBD dried flowers and derivative products, including pollen — provided it comes from a legal cultivation by a certified supplier with a current laboratory certificate.
A key practical question: how to verify the legality of pollen? Always request from the seller a current Certificate of Analysis (CoA) from an accredited laboratory, confirming THC content below 0.3% and CBD content. A certified seller will have these documents available upon request or publicly on the product page.
Hemp pollen is NOT the same as hashish. Hashish is compressed pollen (often from high-potency plants) intended for smoking or vaporization, often illegal in Poland. CBD hemp pollen from a hemp product store is a product from legal industrial hemp — completely different products, despite their similar appearance.
How to use hemp pollen in the kitchen?
Hemp pollen is used differently in the kitchen than flour or seeds — it is not a structural or protein ingredient, but an aromatic-cannabinoid addition in small amounts. Key principles:
Rule 1: Fat as a carrier. CBD and terpenes contained in pollen are lipophilic — they absorb through fats, not through water. Always add pollen to dishes with fat: butter, olive oil, coconut oil, avocado, cream. A spoonful of honey with a bit of butter makes pollen work many times more effectively than on a dry toast without fat.
Rule 2: Temperature below 160°C. Terpenes are volatile and degrade from about 100°C. Cannabinoids are more stable, but above 160°C they break down quickly. Add hemp pollen to dishes after removing from heat, to cold or lukewarm ingredients, never to frying foods.
Rule 3: Small doses.
Specific culinary applications of hemp pollen:
- Aromatic butter with pollen. Soft butter + 0.2 g pollen + a pinch of sea salt — mix and chill. Spread on toast, cooked vegetables, or steaks after removing from the pan.
- Hemp honey. A tablespoon of liquid honey + 0.1–0.2 g pollen — mix and serve with yogurt or cheeses. Honey is an excellent carrier for the flavors of pollen.
- Power balls with pollen. Dates + hemp seeds + cocoa + 0.2 g pollen — blend. Pollen adds a complex, resinous note to cold desserts.
- Infusion in coconut oil. Coconut oil (melted, 40°C) + pollen — mix for 30 seconds, pour into a jar, chill. Ready cannabinoid-infused fat for cooking at low temperatures.
- Chocolate topping. Melted dark chocolate (70%+) cooled to 35–40°C + a pinch of pollen — pour onto paper, chill. The terpenes of pollen and dark chocolate create a unique flavor combination.
How to dose hemp pollen?
Dosing hemp pollen in the kitchen is one of the more challenging aspects due to its concentrated nature. Unlike CBD oil, where you have a dropper and precise drops, pollen is measured by weighing or estimating with a pinch. A kitchen scale with 0.1 g accuracy is definitely helpful for initial attempts.
Approximate conversions for CBD pollen with a concentration of about 30% CBD:
- 0.1 g pollen = about 30 mg CBD (one small pinch)
- 0.2 g pollen = about 60 mg CBD
- 0.3 g pollen = about 90 mg CBD
For comparison: 5% CBD oil provides about 2.5 mg CBD per drop. 0.1 g of 30% pollen = about 12 drops of 5% oil. That's a lot — especially since effects may appear 45–90 minutes after consumption. Always start with a minimal amount and wait at least 2 hours before assessing the effect and possibly increasing.

Frequently Asked Questions
What is hemp pollen?
Pyłek konopny (kif) to drobny proszek złożony głównie z trichomów — gruczołów żywicznych z kwiatów konopi. Trichomy zawierają skoncentrowane kannabinoidy (CBD, THC, CBG) i terpeny. Pyłek z konopi CBD ma śladowe ilości THC (<0,3%) i nie powoduje efektów psychoaktywnych.
Is hemp pollen legal in Poland?
Hemp pollen with THC below 0.3% has been legal in Poland since May 2022. Buy only from certified sellers with a current laboratory certificate (CoA). CBD pollen is a different product than hashish — it comes from legal industrial hemp cultivation, not from high-potency recreational strains.
How to dose hemp pollen in food?
The starting point is 0.1–0.3 g per serving — this is a concentrated product, a small pinch is already a real dose of CBD (about 30–90 mg at 30% CBD concentration). Always use with fat (butter, oil) for better absorption. Wait 1.5–2 hours before assessing the effect. A kitchen scale with an accuracy of 0.1 g is useful.
What can you add hemp pollen to?
Pollen works well in cold and warm applications with fat: aromatic butter, hemp honey, power balls, infusion in coconut oil, chocolate sprinkles, dessert toppings. Do not heat above 160°C — terpenes degrade from 100°C, and cannabinoids quickly break down above 160°C (Jaidee et al., PMC 2022).
What is the difference between hemp pollen and hemp flour?
Hemp flour comes from seeds — it is a source of protein (30–36%) and fiber. Pollen is made from trichomes from flowers — concentrated cannabinoids and terpenes without protein value. You use flour in portions of 50–100 g as a baking ingredient, while pollen is used in amounts of 0.1–0.3 g as a flavoring and CBD supplement.
