Why do chocolate and CBD make a good combination?
CBD is a fat-soluble compound – its absorption in the body depends on the presence of lipids. The fat in dark chocolate and the cream in ganache acts as a lipid carrier, which increases the intestinal bioavailability of CBD. Huestis (PMC5009397, 2016) showed that the bioavailability of CBD consumed with fat is about 3 times higher than CBD taken without a carrier. This means that the same dose of CBD oil in a truffle works more effectively than the same dose taken on an empty stomach.
The flavor argument is equally strong. CBD hemp oil has a characteristic, earthy, and slightly bitter aftertaste – intense dark chocolate (min. 70% cocoa) naturally absorbs it. Cocoa has a similar bitterness profile, so the hemp aftertaste does not contrast but blends with the flavor profile of the truffles. This effect is more pronounced with 85–90% cocoa chocolate than with milk chocolate, where the sweetness would bring the hemp aroma to the forefront.
CBD dosing in truffles – how to calculate it?
This is a section that cannot be overlooked. 5% CBD oil (e.g., Hempmont Classic 12 ml, 600 mg CBD) contains about 50 mg of CBD in 1 ml. With a standard dropper, about 20 drops fit into 1 ml, which means that one drop = about 2.5–3 mg of CBD.
For a batch of 20 truffles, the typical approach is 10–15 drops of oil for the entire ganache mass (a total of 25–45 mg of CBD). When divided into 20 pieces, it comes out to about 1.5–2.5 mg of CBD per truffle. This dosage falls within the recreational-wellness range, which most people start with without prior experience with CBD.
A dose of 5 mg of CBD per truffle (higher, for those with more experience) requires 30–35 drops for the entire batch of 20 pieces. Do not exceed 5 mg of CBD per truffle without first assessing your tolerance. The total daily dose of CBD commonly used in studies is 20–40 mg – two truffles with 2 mg of CBD each is a gentle start.
Nutritional values – what does one truffle provide?
One truffle (about 15 g of ganache + coating in cocoa) provides about 75–85 kcal, 5–6 g of fat, 2 g of protein, and 5 g of carbohydrates. Dark chocolate with 70% cocoa contains about 8 mg of magnesium and 3 mg of iron per 100 g (USDA FoodData Central, 2023). Two truffles make an elegant dessert portion – about 160 kcal and about 3–5 mg of CBD depending on the dosage.
Ingredients – what do you need?

How to prepare chocolate truffles with CBD oil – step by step?
Truffles do not require an oven or special equipment – just a pot, a bowl, and a refrigerator. Active work takes about 20 minutes, the rest is done by cooling.
Step 1. Heat the cream. In a small saucepan, heat 100 ml of heavy cream until it starts to steam – about 80°C. Do not bring to a boil. Cream that is too hot (above 90°C) can separate the chocolate fat when combining, resulting in a grainy, separating mixture.
Step 2. Make the ganache. Chop 200 g of chocolate into small pieces and place them in a heatproof bowl. Pour the hot cream over it and let it sit without stirring for 2 minutes – the heat will do the work. Stir with a spatula in circular motions from the center to the edges until you achieve a smooth, glossy mixture.
Step 3. Add butter, honey, and CBD. When the ganache cools to about 55–60°C, mix in the butter (for extra creaminess and shine), honey, and the measured number of drops of CBD oil. A temperature below 60°C is critical for CBD – higher temperatures slowly degrade cannabidiol. Mix thoroughly for 1 minute.
Step 4. Chill the mixture. Cover the bowl with plastic wrap touching the surface of the ganache directly. Place it in the refrigerator for 2 hours or in the freezer for 45 minutes. The mixture is ready to shape when it is firm to the touch but not frozen.
Step 5. Shape the balls. Prepare a tray with parchment paper and a bowl with cocoa. Use a spoon to scoop portions of about 15 g and shape them into balls with cool hands. Work in batches of 5–6 truffles and return the rest to the refrigerator between batches – the warmth of your hands melts the ganache faster than you think.
Tips and variations
CBD truffles offer a wide range of flavor variations. Here are a few directions that work particularly well with hemp oil:
CBD dosing – an important note. If you are just starting with CBD, begin with 5–10 drops per batch (about 0.6–1.5 mg of CBD per truffle). The effects of CBD when taken orally appear after 30–90 minutes – do not eat more truffles too quickly while assessing the effect. A dose of 1.5 to 2.5 mg of CBD per truffle is a typical range for those using CBD recreationally for relaxation purposes. Do not exceed 5 mg of CBD per serving until you assess your tolerance.
We noticed in tests that ganache made with 85% cocoa chocolate masks the aftertaste of CBD oil better than 70% chocolate. A higher cocoa content means more polyphenols and a more intense bitterness that absorbs the earthy hemp aroma. With 70% chocolate, the oil's aftertaste is noticeable as a light, not unpleasant note – at 85%, it is almost absent.
Orange version. Add 1 teaspoon of orange zest and a few drops of food-grade orange oil to the ganache. Citrus complements the bitterness of cocoa perfectly and is a classic companion to dark chocolate. The aroma of orange also breaks the hemp aftertaste of CBD oil.
Vegan version. Replace the heavy cream with full-fat coconut milk (250 ml, chilled and drained of water – use only the thick layer). Omit the butter. Coconut ganache is slightly softer, and the truffles require longer chilling (3 hours in the refrigerator). The flavor is more exotic; coconut and CBD make a great combination.
